A Glyx – Summer menu

Summer in the Alps is all about fragrant colourful flower meadows conjuring up a smile on your lips. The warm wind strokes your face, the world is smooth and full of colour. The perfect day to treat your body to something special, and that's why we are sharing another popular GLYX recipe with you – for a summer-gourmet-menu!

Steamed turbot slices with fresh herbs

For 2 people, you need:

  • 1 carrot
  • 1 leek
  • 1 spring onion
  • 1 tbsp organic olive oil
  • 100 ml organic fish stock, homemade is best
  • 100 ml organic orange juice
  • 100 ml organic carrot juice
  • 1 star aniseed
  • 2 organic turbot filets
  • A little seasalt
  • A handful of fresh herbs from the garden

It’s this simple: Cut the carrots and leek into fine julienne strips. Slice the onion into fine rings. Heat the oil in a pan, and lightly sauté the cut vegetables. Add the fish stock, orange juice, carrot juice, and star aniseed and cook on moderate heat for about 4 min. Salt the fish fillets and lay them in the mixture for approximately 7 min. Garnish with fresh herbs shortly before serving, and enjoy hot.

And as a dessert...

A delicious damson-curd cream

Ingredients for 2 portions:

  • 300 g low fat curd cheese
  • 4 tbsp mineral water
  • 4 tsp lemon juice
  • 2 tsp maple syrup
  • A little cinnamon
  • 6 damsons fresh from the tree
  • 2 tbsp roasted and chopped nuts
  • Some vanilla essence

It's this simple:

Stir the mineral water into the curd cheese, add all the rest of the ingredients and garnish with the cinnamon.

The nicest thing about healthy cuisine is above all its simplicity. Fresh, local ingredients, gentle preparation, and no artificial additives. Just how it should be!
