Berry-quinoa-porridge-bowl

We are in bowl fever, whether it be acai, avocado, or a large portion of porridge, meals that are trendy at the moment are really delicious and above all healthy. Today we have a simple recipe for a power breakfast with lots of super foods as a topping.

Recipe for 2 bowls / Preparation time approx. 10 min

  • 100 g oats, 150 ml water, 150 ml cashew milk*, 1-2 tbsp date sweetening or other sweetener of your choice, 1 tsp cinnamon, 3 tbsp chia seeds
  • Topping: 1 banana, 2 tbsp raspberries, 2 tbsp blueberries, 2 tbsp flaked almonds, roasted 2 tsp buckwheat 2 tbsp quinoa, puffed, some chia seeds

*You can easily make cashew milk yourself: mix 80 g cashews with 400 ml water and a pinch of vanilla for 2 min in a blender and higher speed and ready! Buttermilk keeps for 2-3 days and goes very well with coffee and matcha latte.

Preparation

Boil up the oats with water in a small saucepan, add the cashew milk, then reduce the heat. Keep stirring now and then and if it gets too thick, add some more water. Add the date sweetening, cinnamon, and chia seeds, turn off the stove and stir, adding more water if required as the chia seeds swell.
Divide into the 2 bowls and pour the topping on.
